Tuna skin, crisped.

Tuna skin is usually thrown away after the fillet is cut. We clean it, season it with Balinese spice paste and fry it until it shatters. Nothing wasted, everything crunchy.

Cashews, roasted slow.

Whole cashews from East Bali and Flores, dry-roasted in small batches with a pinch of sea salt. No oil bath, no sugar coating. "Mete usir bete" means cashews chase away boredom, and a 70 gram pouch does exactly that.
